Better than Boxed
It’s more than a boxed side
There’s a certain comfort in having meals you can count on—especially on days when time and energy are both running low. Over the years, I’ve started keeping simple mixes like this Spanish rice on hand so I can still serve something homemade without extra effort.
It’s quick to put together ahead of time, easy to cook when needed, and made with ingredients I already keep stocked. In a busy home, those kinds of recipes make all the difference. They bring a little ease into the day while still putting something warm and filling on the table.
Simple Ingredients
- 1 cup rice
- 1/2 cup broken spaghetti
- 1 tsp minced onion
- 1/2 tsp chili powder
- Optional: 1/2 tsp salt
Mix and Store
Combine ingredients and store in a jar.
Cook When Needed
Brown in 2 tsp butter, add 2 cups water or broth, cover and simmer 20 minutes.
