It’s more than a seasoning blend
When you’re putting food up for the year, the little things matter. A good pickling spice is one of those quiet staples that makes all the difference when canning season is in full swing.
Over the years, I’ve found that keeping this blend ready to go saves time and keeps the process simple—especially when there’s a lot to get done. It’s one less thing to think about, and it helps everything come together just the way you expect it to. Simple, reliable, and always worth having on hand.
It also comes in handy when your daughter shows up with 15 cucumbers and says she wants to pickle them (with no warning). If you ask her, you should “let your heart lead you” and add some extra spices here and there, “just for fun”.

A Classic Blend
- 2 Tbsp peppercorns
- 2 Tbsp coriander seed
- 2 Tbsp dill seed
- 2 Tbsp mustard seed
- 1 Tbsp allspice
- 1 Tbsp red pepper flakes
- 5 whole cloves
- 5 crushed bay leaves
- Sprinkle of ginger
Mix and Store
Combine and store in a mason jar.
How to Use
Use 1 Tbsp per quart jar when pickling.
